Paul is a dedicated entrepreneur and hospitality leader who has been shaping vibrant community spaces since opening his first business in 2016. In 2020, he took the helm at Canteen, where his commitment to community, sustainability, and genuine connection continues to drive the business forward. Known for his kindness, attention to detail, and high standards, Paul brings both heart and precision to everything he does. Outside of work, he’s a proud dad to three young kids - and Carrot the dog - balancing his passion for hospitality with the joy of family life.
Chloe knight
Driven by strong values and a passion for people, Chloe is a respected leader in hospitality known for her fairness, honesty, and not taking things too seriously. Since joining Canteen in 2021, she has led our events team with energy and expertise, running large-scale events with ease — bringing professionalism, warmth, and personality to everything she does. A familiar face in our café and the heart of our community, Chloe embodies the welcoming spirit that makes Canteen what it is.
Amy Senior
With her warm, bubbly personality and ever-present smile, Amy brings a sense of care, calm, and connection to everything she does. Known affectionately as the “company mum,” she leads our weddings with unwavering organisation and an incredible attention to detail, ensuring every couple’s day runs seamlessly and feels uniquely personal. Guided by love and kindness, Amy’s genuine warmth shines through in every interaction — from supporting our team to welcoming guests with her trademark smile. Family-focused and full of heart, she’s a proud mum to Otis and Milo, and a familiar, friendly face at the centre of our Canteen community.
Ben Green
With his quick wit and easy sense of humour, Ben brings warmth and laughter to the kitchen every day. Known for his incredible work ethic and kind nature, he keeps our kitchen running seamlessly - immaculately clean, calm, and full of good energy. Trained at Jamie Oliver’s Fifteen, Trelowarren Estate, and with cheffing experience in France, Ben combines classical technique with creativity and heart. A true master of the smoker, his food is always full of flavour and inspired by the Mediterranean spirit of a nonna’s kitchen - connecting people through the joy of sharing food. Ben writes all our menus and works closely with wedding couples to craft dishes that are personal, memorable, and delicious. Whether behind the smoker or chatting with guests, Ben’s energy and skill make him a cornerstone of Canteen.
Andy Carr
Andy is our longest-serving chef. His food is what you taste when you come to Canteen - bold, vibrant, and full of heart. A true wizard of flavour, he brings creativity and energy to every dish, with a mastery of cooking on fire. Having owned restaurants and taught cookery at college, Andy is a seasoned professional whose experience makes him a true veteran in the kitchen. Unfazed whether he’s cooking for 30 or 300, he cooks with quiet skill and passion. Outside the kitchen, Andy is a devoted husband and father who loves nothing more than hitting the open road in his camper van in search of new adventures and flavours.
Ben Quinn
Ben founded Canteen in 2017, driven by a passion to positively disrupt the industry. His cheffing career has taken him around the world, collaborating with leading chefs, self-publishing a cookbook, and appearing on radio, television, and in two TED Talks. In 2025, Ben left Canteen to focus on his coaching and consultancy business - Good Space, continuing his work to promote positive connection.
